Oh, then there is the case of compound nouns!
Not only do we normally not think of things owning other things, we often simply create compound nouns. Here are some examples of compound nouns.
bank transfer
car keys
our Monday class
car insurance
car insurance documents
insurance agent
insurance company agent
car damage
the weather
the weather today
the weather yesterday
our meeting
our meeting today

We do not say or write any of the following.
bank's transfer
car's keys
our Monday's class
car's insurance
car's damage
the weather's day
the day's weather
our today's meeting
However, when talking about a thing belonging to another thing, it is very common, perhaps most common, to use the "of" construction or to use a compound noun,
These are all correct. These all have the same meaning.
Monday's class starts at 7:00AM.
The class on Monday starts at 7:00AM.
The Monday class starts at 7:00AM.
However, only two of these are correct
(incorrect) Our Monday's class starts at 7:00AM.
(correct) Our class on Monday starts at 7:00AM.
(correct) Our Monday class starts at 7:00AM.
